Huevo, Da’n, Oeuf, or Egg

We hope this email finds everyone not only in good health, but prospering. We are doing great and are healthy. It is amazing how many things no longer hurt or give you problems when you stop eating poison food. Here in Ecuador, we are constantly reminded of the necessity for growing your own food. Yes, Monsanto has its evil claws dug into Ecuadorian agriculture also. This update may seem different than the previous ones, and some may even call it a rant. Sometimes we get fed up and feel the need to shed light on subjects that can either damage your health or impact your wallet adversely.


So, the title is about eggs in 4 different languages. I am using different languages to say the same thing, because I want to make a point: not all countries treat the common egg the same. Many of you know that Lisa and I have raised laying hens and broilers for a long time in the U.S. and were quite successful in doing so. My first experience was all the way back in high school where I raised broiler pens for the FFA chapter. We have learned much about chickens and eggs over the years and have watched the anti-egg marketing campaign by the American Medical Association fade away as new research and new studies show that most of those so-called “facts” about eggs were simply lies. These lies were created to steer you toward other products that the Lobbyists in Washington wanted you to buy, not so that your health would be protected.


The idea that government is trying to protect you is almost laughable today. I remember growing up, I believed it. But then, I learned to read. The more I read the more I see common threads and facts that prove government rarely does anything to benefit society. I am reminded of a bible verse from 1 Corinthians – “When I was a child, I spake as a child, I understood as a child, I thought as a child: but when I became a man, I put away childish things”. It has come to a point where government is only self-serving. Those of you who work in government will either be unhappy with that statement, or you will be in total agreement and looking for a way to retire. Bless, you either way, and I hope enlightenment comes your way.


As a former farmer in Williamson County, Texas We were required to wash our eggs and they had to be dirt free. In addition, they always had to be kept at or below 42 degrees. To sell them at a Farmers Market, we had to have an Egg Permit from the county which amounted to nothing more than a tax. Occasionally someone from the county would show up to the Farmers Market and place a thermometer in your ice chest to ensure you were keeping them at 42 degrees. Even when it is 105 in July, we were required to keep them cold. If you sold in multiple counties, you had to buy a permit for each county. Some of these permits were well over $100.00 each. In addition, you had to pay the Farmers Market Organizer an annual fee ranging up to $350.00 per year in addition to a weekly fee of up to $75 per week. You also had to guarantee that you would be in attendance most of the year. Now some of you are having an “a-ha” moment right about now. You are starting to realize why an Organic, Pasture Raised egg from the Farmers Market is so much higher than those sold by the mass merchandiser. Some of you are informed enough that you know there is a huge difference between our eggs and those purchased from your local grocery store.


Back to the County Health Department fiasco. So, the counties tend to enforce Federal law concerning eggs. If you talk to 5 different folks at the Texas Department of Health Egg Quality Control division, you will get 5 different answers about what Federal Law has to say on the matter. I was told by the head of that department that they never check Farmers Markets. I have had in-depth conversations with the head of the health departments for both Williamson and Travis Counties. They both firmly believe that not washing and refrigerating eggs would lead to loss of human life. They are so deluded in their thinking, that they might really believe they are protecting consumers in some way. They would be dead wrong. In fact, none of these people could cite to me a single case of anyone being harmed by a Farm Fresh Egg!


Here in Ecuador, no one washes eggs or refrigerates them. Here, they understand that washing removes the “Bloom” on the egg, which is its natural coating that protects the shell and keeps the bad things on the outside and the good things inside. Google it if you want, you may be surprised! Washing an egg can cause the shell to be permeable and bacteria can then penetrate the white and yolk. Any harsh chemicals or chlorine from the water can also get sucked right inside the egg. We had many customers who demanded that we not wash or refrigerate their eggs when we farmed in Texas. We accommodated them by having them drive to the farm to pick up their order. This is what you call a legal loop hole.


Here in Ecuador you see flats of eggs stacked up at every Farmers Market as far as the eye can see. We went to the SuperMaxi in Loja this week and they stack theirs on the floor as well. No refrigeration, no A/C and no one gets sick. In all of Europe, no one has refrigerated or washed an egg for over 40 years. They have introduced Salmonella to the Laying Hen chicks and have made them resistant. There is no danger of Salmonella in these eggs. In Sweden, it is against the law to wash an egg as it is in many other countries. No one gets sick and the farmer makes a decent wage. America is the only country where a farmer is thought to be less important to society than a doctor, lawyer, bureaucrat or a politician. In many other countries, the farmer is held in high esteem as they once were in America. I would argue that the farmer is the most important member of society when it comes to your health.


Folks, this must change. This is just one small example of how government has completely lost its way. They have stopped serving the people that they “steal” money from and now use those same tax dollars to conspire against its own people. The things that are reported on by the mainstream media are either designed to cause a smokescreen, or to obtain more market share. It is simply about greed, not about protecting you and me.


Sorry to be such a chicken little, doomsday prepper and all-around sounding like a nut job. Shucks, twenty plus years ago I probably thought I would sound crazy saying these things. Time to do something about it, we do every day. We have spent the last 10 years trying to educate people about chemical companies, political scams, health scams and what foods are good to heal your body. We won’t stop, we are doing the same here in Ecuador. It doesn’t always make us the most popular couple on the block, but we answer to the highest power there is. It is a moral imperative!


Now go cook yourself up some scrambled eggs in coconut oil and throw in some zucchini and green beans in that pan. If you change just this part of your diet you will thank me after your next cholesterol check! Cholesterol may be my next rant, or maybe farm subsidies.
