Bread

​Preheat: 425                 Bake 20 minutes 

  • 1-1/2 tbsp. yeast

  • 3 cups warm water

  • 6-1/2 cups flour

  • 1-1/2 tbsp. salt

  • 1-1/2 tbsp. Apple Cider Vinegar
     

ADD ALL INGREDIENTS TO A LARGE BOWL IN  THE ORDER LISTED ABOVE.

  1. Once combined, cover with a tea towel for 3 hours then add a loose lid and move to the refrigerator for 3+ hours. The batter is good in the refrigerator for about 10-14 days.

  2. Remove portion from the fridge and form into loaf. Let the dough sit in loaf form for a few hours before putting it into the oven.

  3. PREHEAT oven to 425 degrees. Put Dutch oven in the oven while preheating... before adding the dough. BAKE for 20 minutes with the lid on, then an additional 5 minutes without the lid to brown. Cool for at least 20 minutes before cutting.

NOTE: if you like the bread crust crunchier, cook for 5-10 minutes without the lid.

OPTIONS: You can roll some of this out to make cinnamon rolls or butter bread or rolls.

Sweet Rolls

Preheat oven 325                                 Bake 20-22 minutes

  • 1 cup milk

  • 75 grams condensed milk

  • 1 egg

  • 2 tbsp sugar

  • 7 grams yeast

  • 400 grams flour

  • 5 grams salt

  • 50 grams butter
     

  1. Combine milk, condensed milk, egg, sugar and yeast and mix well, then set aside and allow the yeast to activate.

  2. Combine flour, salt and butter and mix well.

  3. Combine all ingredients until dough forms, them kneed for ~8 minutes until smooth and elastic. Set aside for about an hour.

  4. Kneed again for about a minute, then divide and allow to rise for about an hour.

Buttermilk Biscuits

Preheat oven 425                                  Bake 15-20 minutes

  • 2 1/2 cups flour

  • 2 tbsp. baking powder

  • 1 tsp salt

  • 1/2 cup butter (cubed and cold)

  • 1 cup buttermilk

  • 2 tsp honey
     

  1. combine dry ingredients, then cut in butter until you have course crumbs

  2. add wet ingredients. combine only, do not over mix as it will become crumbly

  3. make multiple folds, flatten and fold, then repeat

  4. roll out ~1 inch thick, then use cookie cutter to form, but do not twist the cutter when making the rounds. place on cookie sheet and bake.

Pancakes

  • 2 cups flour

  • 1/4 cup panela

  • 4 tsp baking powder

  • 1/4 tsp baking soda

  • 1/2 tsp salt

  • 1-3/4 cup coconut milk (add enough milk for desired consistency)

  • 1/4 cup butter, melted

  • 2 tsp vanilla

  • 1 large egg

  1. Combine all ingredients, then spoon out onto a medium hot griddle. 

  2. Cook until golden brown on each side. Serve warm

Cinnamon Rolls

Preheat: 350                 Bake 20 minutes 

​DOUGH

  • 179 g warm milk

  • 2 1/4 tsp active yeast

  • 1/4 cup sugar

  • 1 egg + 1 egg yolk

  • 57 g  butter, melted

  • 408 g flour

  • 3/4 tsp salt

FILLING

  • 2/3 cup sugar

  • 1 1/2 tbsp. cinnamon

  • 1/4 cup butter, softened

  1. combine dough ingredients, kneed for 8-10 minutes until ball forms, then transfer to oiled bowl and cover with plastic and a warm cloth for a few hours.

  2. after it has risen, roll out, then add the filling mix. Butter first, then sprinkle with cinnamon and sugar mixture.

  3. roll up, then cut into ~1-1 1/2" pieces and place in a baking dish. 

  4. cover with plastic and cloth once again and let it rise for about 45 minutes, then bake for 20 minutes. Once slightly cooled, add the frosting.

FROSTING:

  • 4 oz. cream cheese

  • 3 tbsp. softened butter

  • 3/4 cup powdered sugar

  • 1/2 tsp vanilla extract

Avocado Deviled Eggs  (Keto)

  • 6 boiled eggs, peeled

  • 1 avocado

  • 1 tbsp. lime juice

  • 2 tbsp. cilantro

  • salt and pepper to taste

  • OPTION: top with pre-cooked bacon bits
     

  1. The easiest way to boil eggs is actually to steam them. Especially if utilizing fresh eggs. Steam for about 15 minutes, then allow to cool. They will peal much easier.

  2. Once cooked and pealed, cut each egg in half and pop out the yolk.

  3. Combine remaining ingredients (you can include or exclude the egg yolk. I keep it in due to the nutritional value of the yolk.

  4. Fill each egg half with the new avocado mixture and refrigerate until ready to serve.

Tuna Avocado Balls (Keto)

  • 10 oz. tuna, drained

  • 1 avocado

  • 1/2 cup parmesan cheese

  • 1/2 cup mayo

  • 2 garlic cloves

  • salt and pepper to taste

  • almond flour

  • coconut oil for cooking
     

  1. Combine all ingredients except almond flour and coconut oil.

  2. Form into small flatted balls, then roll in almond flour. 

  3. Cook in hot coconut oil until browned.

Pig Shots   (Keto)

  • Zucchini, diced in fairly small pieces

  • Cream Cheese

  • Mozzarella Cheese

  • Chili Powder

  • Bacon (wrap around for the sides of the cup. A toothpick will hold it together)

  • Sausage (for the bottom of the cup)
     

  1. There are no quantities here as it depends on how many you are making. Just balance the mixture. You can add as many veggies as you like just keep the pieces small. I can see adding broccoli pieces and possibly some cauliflower pieces to the cream cheese filling.

  2. I have cooked these both in the oven and on the grill. On the grill, though the tops are pretty, mine did get too crispy on the bottom, but still tasted great. If on the grill, cook them farther away from the direct bottom heat and they should come out okay. Some also take and add BBQ sauce to the top, I chose not to.

    In the oven, bake at 350 degrees for about an hour. Instead of using toothpicks, I used a silicon cupcake mold.
